Nutritional yeast is heat-deactivated yeast sold as yellow flakes or powder for cheesy, nutty, umami seasoning. It starts from the same broad yeast-cultivation industry as baker’s yeast, but the cells are killed and dried so they cannot raise dough. Treat it as a flavour product, not a leavener—brioche and bread must use living Fresh, Active Dry, or Instant Dry instead. Sprinkle on vegetables, popcorn, and plant-based sauces. A good jar is bright, dry, and savoury; bad stock is stale, damp, or cardboard-flat. Often fortified with B vitamins—check labels if that matters to you. Suppliers should list nutritional yeast on this leaf so it is never confused with instant dry on a shopping list. Store airtight away from steam.
