Active Dry
Active dry yeast is baker’s yeast dried into coarser granules so the living culture survives months in a packet. It is a shelf-stable preparation of the same organism sold as fresh yeast: cells are grown, dried, and packed so home bakers need not buy perishable blocks. Traditionally it prefers a short soak in lukewarm water before mixing into dough, which wakes the culture more gently than dumping it into cold flour. Use for any yeasted bread when the recipe or the pantry specifies active dry. A good packet is within date, free of hard damp clumps, and foams when proofed with warm water and a pinch of sugar. A bad packet is stale, wet, or dead—no foam, no rise. Compared with instant dry, allow a brief proof step or a little more time. Store airtight and cool. This is a real stock-keeping form suppliers can offer separately from fresh or instant.
