Shelled walnuts are kernel stock already removed from the hard shell for immediate cooking. Convenience is high; shelf life is shorter than sound in-shell lots if storage is warm. Taste target is clean sweet-bitter walnut without shell grit, mould flecks, or varnish aroma. Vacuum and nitrogen packs help, but cool storage after opening still matters. Ready for baklava, salads, pestos, baking, and grinding. Check packs for shell shards before serving children. Freeze what you will not use soon. Good shelled stock looks plump and appropriately light for its grade; poor stock is dark, shrivelled, or greasy-stale. Light toasting is a common next step. Major tree-nut allergen labelling applies. Prefer recent harvest dates on bulk bins and sealed bags alike.
