Pellicle
The walnut pellicle is the thin brown seed skin on shelled kernels, rich in colour and tannin. It adds astringency around the sweet-bitter core of the meat and freckles meals and cookies when left on. Pastry chefs remove it for pale pastes; whole-food cooks and sauce makers often keep it for flavour depth. Blanching and rub-off after light roasting are the usual removal methods. Pellicle dust can stain white icings—sieve carefully. Do not eat woody shell fragments thinking they are pellicle. Some diners find skin-on kernels harder to digest; blanching is a practical fix. Home kitchens usually compost removed skins. Allergen status remains major tree nut either way. Good pellicles are dry and thin; mouldy coats condemn the kernel. Fresh pellicle bitterness is part of classic walnut character; oxidised bitterness from rancid oil is not the same thing and cannot be fixed by peeling.
