Split Kernel
Split walnut kernels are halves, quarters, or natural breaks that expose more surface for roasting, coating, and even scatter in doughs. They brown a little faster than perfect wholes and distribute more evenly through brownies, cookies, and batters. Taste remains true walnut when stock is fresh; extra surface only means rancidity can announce itself sooner if storage is warm. Packers often sell splits and pieces when perfect halves command a premium garnish price. Use splits when even distribution matters more than jewel-like appearance. Check for shell fragments after mechanical cracking. Cool and freeze surplus promptly. Good splits smell clean and feel slightly oily without greasy staleness; bad splits taste bitter or dusty. They remain full major tree-nut pieces for allergen control. Toast carefully—thin edges scorch first.
