Salmon soft roe (milt) is the male gonad—creamy, mild, and fragile when raw. It is milder than muscle and far milder than hard roe, with a custard-like texture when gently cooked. Flour and pan-fry, or warm carefully in butter and white wine. High heat or boiling makes it grainy; treat it like a delicate offal, not a steak.
