Salmon heart is dense muscular organ meat—lean and almost beefy when sliced thin across the grain. It is darker than the pink loin and has a mineral edge that suits aggressive seasoning. Trim valves and silver skin, then grill hot and fast or braise until tender. Do not treat it like fillet; high heat for rare slices or low heat for long cooks both work, mid-temperature muddle does not.
