Rack

Salmon rack is a rib section left on the bone for roasting or frenched presentation. The bones shield the pink flesh and baste it as fat renders, giving a showpiece that still eats like rich salmon rather than a dry roast. Roast hot enough to colour the surface, then rest briefly before carving into chops. Protect exposed bone tips with foil if frenched so they do not blacken before the meat is done.
