Tip

Tongue tip is the tapered front—slightly firmer grain, cute for pickling whole in small pieces or for children’s portions of lengua. Same long simmer and peel as the rest of the tongue. After cooking and peeling, pickle in vinegar spice brine or sear briefly for contrast. Tips make tidy canapé slices. Do not expect the broad sandwich slices of the centre; use their shape for small plates.
