Pork sweetbreads are thymus or pancreas glands from young pigs when available—delicate, creamy offal after proper soaking and peeling. Supply is limited compared with veal; flavour is mild when fresh. Soak cold, blanch, peel membranes, press, then sauté or fry with a light crust. Finish with brown butter, lemon, or capers. Overcooking ruins the custard texture. Buy only very fresh product and cook soon.
