Striploin

Pork striploin is the boneless longissimus from the loin—essentially a boneless loin roast or the eye of a strip steak when sliced. Lean, mild, suited to roasting whole or cutting into medallions and steaks. Brine or oil-herb rub, roast to juicy doneness, rest, and slice. For steaks, high heat then brief finish. Fat cap can stay on for basting. Pair with bright sauces; the meat itself is subtle. Overcooking is the main failure mode.
