St Louis Cut
St. Louis–cut ribs are spare ribs squared by removing the sternum, tips, and flap—a neat rectangular rack that cooks evenly and looks tidy on a competition tray. Meat is still spare-rib rich, just better shaped. Season evenly, smoke or oven-roast low, and manage the stall with a wrap if desired. The uniform shape makes glaze and bark consistent edge to edge. Ideal when presentation matters as much as flavour.
