Pork ribeye is a boneless chop from the rib section of the loin—the eye muscle with good marbling, analogous in spirit to beef ribeye though milder. Sometimes sold as a thick “pork ribeye steak” for grill menus. Season simply, sear hard, and finish to juicy medium. Butter baste with herbs. Thickness makes reverse-sear worthwhile. Leave a fat edge for basting or trim if flare-ups threaten. A step up in juiciness from centre loin medallions.
