Shape is tapered; meat is flavourful with plenty of connective tissue for pulling after long heat. Smoke or oven-roast low until shreddable; crisp skin if present. Cured picnics slice for sandwiches though less elegant than rear-leg ham. Perfect for feeding many people without premium pricing. Use the bone afterward for beans.
