Baby Back Ribs
Baby back ribs are cut from where the rib meets the spine after the loin is removed—shorter, more curved, and typically more tender than spare ribs, with less fat and a higher price per kilo. The name does not mean meat from piglets; “baby” refers to the short rack. Membrane on the bone side should be peeled for better texture and rub penetration. They are prized for quicker barbecue cooks and for neat individual bones on the plate. Smoke or oven low until tender; finish with glaze if desired. They dry out if cooked like a thin chop on high heat only. One rack often serves one hungry person or two as part of a spread.
