Cold-pressed pistachio oil is mechanically expressed at low temperature so green aroma and colour survive the press. It tastes vividly of pistachio—sweet-savoury and floral-nutty— unlike nearly silent refined oil. Best as a finishing oil for salads, vegetable plates, and pastry brushes rather than hard deep frying. The green-gold hue is part of the luxury signal; brown oil often means age or heat abuse. Buy dark glass in small volumes and finish within months of opening. Price reflects low yield from expensive kernels. Cloudiness can be normal in unrefined bottles; varnish smell is never normal. Do not confuse this flavour oil with neutral refined fat. Discard rancid bottles rather than masking them with herbs.
