Shelled pecan is kernel stock already removed from the hard shell—halves and pieces ready for immediate cooking. Convenience is high; shelf life is shorter than sound in-shell lots if storage is warm. Taste target is sweet-buttery with tender crunch and a clean aroma free of paint. Mechanical cracking and grading have already done the industrial work; your job is cool storage and sorting. Ready for pie rings, chopping, roasting, or grinding. Vacuum packs help but still deserve refrigeration after opening. Check for shell shards before serving children. Broken pieces in a “halves” bag are common in lower grades; re-sort if presentation matters. Compared with pre-ground meal, shelled stock lets you control the freshness of every grind.
