In-shell macadamia is the nut still locked in its extremely hard shell—primarily a trade and processing form rather than a casual table-cracking snack. Shells protect the soft oily meat during harvest and shipping if kept dry. Home cooks almost never crack macadamias with ordinary tools; industrial crackers do the work. Sound in-shell lots can store longer than warm shelled kernels when warehouses are cool and dry. Discard nuts with holes, mould, or a dusty rattle. When specialty packs offer in-shell macadamias, use proper heavy crackers and inspect meats carefully for fragments. For everyday cooking, buy shelled style grades. In-shell stock’s main value is logistical protection before the kernel meets air and light.
