Loquat fruit is the whole orange-yellow pome as sold—thin skin, juicy floral flesh, and large seeds in a central cavity. Spring harvest fills the gap before summer stone fruit. Size and sweetness vary by cultivar (Tanaka, Champagne, and others); ripe fruit yields slightly and smells fragrant. Eat out of hand, cook into jam, or poach. Handle gently—thin skin bruises and weeps. Fruit does not store like apples; use within days of peak ripeness or process into preserves.
