Halved loquat is fruit split lengthwise so the large seeds lift out and the cavities can be filled, poached, or arranged cut-side up for tarts. A quick slice through the stem end opens the fruit; scoop seeds with a spoon tip. Halves brown slowly compared with apple but still benefit from light acid if held. Use for roasting with honey or packing into jars for preserves.
