Tail
Ling tail is the tapering rear section of the fillet or whole fish—thinner, with more bone relative to meat on whole tails, and quicker to dry than loin. Useful for stews, fish cakes, and stock when too thin for elegant steaks. Flake still holds in moist heat. Poach or stew rather than hard-grill. Combine with belly for minced products. On whole tail steaks, watch the thin end so it does not overcook before the thicker end is done.
