Ling liver is soft, rich, and strongly flavoured—closer to other white-fish livers than to foie gras. Freshness is everything; bitterness and soft spoilage develop fast. Pan-sear briefly or use in pâtés and sauces where marine richness is wanted. Soak briefly in milk if very strong, then cook hot and short. Not for every palate; optional on modern menus.
