Loin
Ling loin is the thick upper back muscle of the fillet—the densest, most even section for neat steaks, medallions, and restaurant portions. It has little belly fat fringe and cooks more uniformly than tail pieces. Colour is pale and translucent when raw, opaque white when just done. Roast whole loins or cut into even steaks for pan-roasting. Because ling is lean, baste with butter or oil and pull early. Premium loins command higher prices than thin tail trim.
