Ventral

Fish

Ventral

Ventral ling fillet is the lower, cavity-side band of the fillet—closer to the belly, often slightly softer and with more irregular thickness. It may carry more pin-bone work near the ribs. Flavour is still mild ling white fish. Best for stews, baking in sauce, or careful pan work after trimming. Not the first choice for uniform steakhouse-style portions.
