Dorsal ling fillet is the upper back side of the fillet toward the dorsal fin line—firm, thick muscle that behaves like loin. On a long fish such as ling this band runs far toward the tail before thinning. Excellent for neat rectangular portions. Grill or roast with the thicker orientation; the dorsal edge holds shape under heat. Pair with a crisp skin finish when skin is left on.
