Rack

Fish

Rack

Ling rack refers to a section of spine with ribs still attached—sometimes with meat left for roasting or grilling as a thrifty “rack” presentation, or cleaned for stock. On a long fish the rack is elongated rather than a short chop. Roast for stock depth or pick residual meat after simmering. Not a primary table cut like a lamb rack, but useful terminology for butchery and stock prep.
