Ling belly is the thinner, slightly richer lower edge of the fillet where the body cavity was. It has more connective tissue and a touch more oil than the loin, so it browns and crisps well but can overcook into dryness if left thin on a hot grill. Pin bones may remain near the cavity edge. Use for fish cakes, stews, or crisp pan-fries where perfect rectangular portions matter less. Trim dark bloodline for milder flavour. Good value from large fish after loins are taken.
