Blanched Kernel
Blanched kola nut kernels have the brown pellicle loosened and removed with hot water or steam, leaving a pale seed from the caffeine-rich seed of Cola species native to West African rainforests. Pale colour matters for fine pastes, white chocolates, and light European-style pastries. Flavour is cleaner and less tannic than skin-on stock while still showing bitter-astringent then sweetish, used as a chew and flavour extract more than a baking nut. Blanching is used when split and chew fresh or dried; extracts for beverages are industrial specialities. Dry thoroughly after blanching so later frying or freezing does not sputter or ice. When visual delicacy counts. Storage: fresh kolas are perishable; dried keep cooler and drier. Caffeine content is real; treat as a stimulant food, not an anonymous baking chip.
