Pellicle
The hazelnut pellicle is the thin brown seed skin on shelled kernels, rich in colour and mild tannin. It adds astringency around the sweet core and freckles meals and cookies when left on. Pastry chefs remove it for pale pastes and gianduja colour control; whole-food cooks may keep it for rustic flavour. Roast-and-rub and blanching are the usual removal methods. Pellicle dust can stain white icings—sieve carefully. Do not eat woody shell fragments thinking they are pellicle. Home kitchens usually compost removed skins. Allergen status remains major tree nut either way. Good pellicles are dry and thin; mouldy coats condemn the kernel. Fresh skin bitterness is mild; oxidised bitterness from rancid oil is a different failure and cannot be fixed by peeling alone.
