Eggshell is the calcium-carbonate outer protection of the egg. It is almost always discarded, though clean crushed shell is a traditional consommé and coffee clarifier—not a plate ingredient. Never add dirty exterior shell to food without a clear safe technique. Compost or bin routine shells after cracking.
