Poultry
Flat
Duck wing flats are the middle segment—skin-heavy, great for sticky braises and cold spiced platters in Chinese cookery. Collagen softens with time into pleasant chew. Simmer in master stock or braise until tender; chill for sliced cold appetisers or finish hot and glazed. Not a speedy buffalo-wing substitute without pre-tenderising. Excellent beer snacks when sticky and lacquered.
