Wing tips are the final pointy segment—little meat, lots of skin and cartilage, best destined for stock rather than the plate. Some fried-chicken traditions still cook them for crunchy nibblers. Freeze tips until you have enough for a gelatinous pot of stock. Roast first for deeper flavour if making jus. If frying for snacks, cook until deeply crisp. Never waste tips when stock is an option.
