Oyster Meat

Oyster meat is the two small, round dark morsels on the back near the thigh joint—among the most tender bites on the chicken. Carvers who know hide them from the rest of the table. Leave oysters on the bone when roasting and claim them when carving, or cut free for a quick sauté. They need almost no special technique—just recognition. Overcooking is possible but harder than with breast. A cook’s treat more than a retail pack.
