Breast

Chicken breast is the large white pectoral muscle—mild, lean, and the default “healthy” cut of industrial poultry. Bone-in skin-on breasts baste themselves; boneless skinless fillets cook in minutes but dry if pushed past just-done. The tender (tenderloin strip) can be separated for fingers or left on. Thickness varies; even cooking often means butterflying or pounding. It is prized for speed, neutrality under sauces, and high yield of white meat. Brine or buttermilk-soak for juiciness; sear then finish gently; rest before slicing. Overcooking is the common fault—pull at 70–74°C depending on preference and food-safety guidance. Dark meat lovers find it bland; that blandness is why it dominates children’s menus and meal prep.
