In-shell chestnuts are the raw market form still wearing their hard brown armour. This is what you buy by the bag for home roasting: each nut must be scored, heated, and peeled. The shell slows moisture loss and keeps the kernel cleaner during short cool storage, but it does not make the nut immortal. A good in-shell chestnut is heavy, shiny, and free of punctures. A bad one is dull, lightweight, or shows white mould near the base. Keep them in a cool, ventilated place like potatoes, not sealed warm plastic where condensation breeds spoilage. Plan to cook within a week of purchase for peak sweetness. The shell itself is waste after cooking; all culinary value sits inside.
