Bonito loin is the thick upper back muscle—the densest, most uniform section for steaks and searing. Expect dark, robust, tuna-family. This is the premium centre for high-heat cookery. Cut medallions or leave whole to roast. Fresh grill fish and dried katsuobushi for dashi are different products. Avoid cooking past the point where moisture leaves the grain; oily, strong umami when dried.
