Belly
Bonito belly is the richer ventral strip—oilier than the loin, with oily, strong umami when dried. It browns well and stays moist under high heat. Grill, confit in oil, or slice for rich crudo if grade allows. Fresh grill fish and dried katsuobushi for dashi are different products. Yield is limited compared with loin.
