Refined

Refined black walnut oil is deodorised toward a milder fat for formulas that need walnut oil without the full resinous perfume. It tolerates gentle cooking better than fragrant cold-pressed lots, yet still ages if left warm and open. Taste before dressing delicate salads—some bottles are nearly silent. Labels should say refined clearly. Pure fat carries none of the protein of meal. Allergy: tree-nut oil.
