Oil
Black walnut oil is a finishing fat pressed from cured kernels, loud with the same wild resinous note as the meat. Cold-pressed bottles taste more of the nut; refined styles are quieter but still not neutral fry oil. Use in small drizzles on salads, vegetables, or breads where a woodland edge is welcome—deep frying turns it bitter and polymeric. Buy tiny dark bottles, recap hard, and keep cool; this oil ages faster than many pantry fats. Good oil smells clean and true; varnish means discard. Label as tree-nut oil.
