Bison sirloin steak is a weeknight grill cut from the sirloin block—more flavour than fillet, more chew than ribeye, and still leaner than typical beef sirloin. A short dry brine and high heat bring out the sweet, clean character; long wet marinades are optional and should stay light so the meat still tastes like bison. Cook hot to medium-rare, rest, and slice across the grain if serving family-style. Overcooking to well-done without sauce leaves a dry, grey centre. A cast-iron sear with a final butter baste works as well as open flame for indoor kitchens.
