Tri-Tip

Tri-tip is a triangular muscle from the bottom sirloin, long beloved in California Santa Maria barbecue: rubbed with salt, pepper, and garlic, grilled over red oak, and sliced thin. The grain changes direction within the piece, so carvers reorient the knife mid-joint. It has more chew than strip, more flavour than fillet, and enough fat to stay moist if not overcooked. It is prized regionally as a roast-steak hybrid—small enough for a weeknight, large enough for a crowd. Reverse-sear or grill two-zone to medium-rare; rest; slice thin against each grain line. Outside the US West Coast it was underused until recent butcher trends spread the name.
