Tomahawk

A tomahawk is a bone-in ribeye with the rib bone left long and frenched like a handle—essentially a single-bone côte de bœuf cut to look like a hatchet. The eating quality is ribeye: marbled eye, optional cap, rich fat. The bone is mostly presentation and heat mass; it does not make the meat more tender, but it does make the steak a spectacle. It is prized for sharing, for charcoal-grill theatre, and for menus that sell “experience” as much as muscle. Cook like a thick ribeye—reverse-sear or two-zone grill—to render fat without charring the exterior black. Rest well; carve off the bone to serve. One tomahawk often serves two or three.
