Silverside
Silverside (outside round) sits on the outer hind leg, named for the silvery membrane on its face. In Britain and Ireland it is the classic cut for salt beef and boiled silverside with carrots and dumplings; it also pot-roasts when larded or cooked moist. The grain is firm and lean—dry oven heat alone often disappoints. It is prized for curing and for traditional boiled dinners rather than as a pink roast. Salt or brine for several days for salt beef; simmer gently until tender. For fresh pot roast, brown then braise with onions and stock. Slice thin across the grain.
