Neck

Neck meat is heavily worked, full of connective tissue and flavour, sold for stewing, mince, or slow braises. It rarely appears as a steak. In some cutting styles neck blends into chuck; in others it is a distinct stewing pack. Bones from the neck enrich stocks. It is prized for stock and stew foundations rather than quick cooking. Brown and braise with aromatics; expect several hours. When finely trimmed and ground, neck adds flavour to burger blends.
