Knuckle
Knuckle (sirloin tip in some US charts) is a round muscle group that can be roasted, cubed for kebabs, or sliced for stir-fry when from younger cattle. It is leaner and more open-grained than topside, with good flavour if not dried out. European “round knuckle” trimming varies by country. It is prized for tidy roasting joints and for stewing meat with more character than pure grind. Lard or baste for dry heat; braise for certainty. Slice across the grain for steaks or sandwiches.
