Heel

Heel of round is a tough, sinewy tip of the hind leg used almost exclusively for grinding, stewing, or long braising. It has excellent flavour but little steak potential. Some trim becomes soup meat. It is prized only for economy grind and stew—honest beef taste when collagen melts. Cube small, brown, and braise thoroughly; or grind with fatter chuck for burgers.
