Beef fillet tip is the tapered tail of the tenderloin—smaller in diameter, still very tender, ideal for medallions, tips for stir-fry, and kebabs. Because pieces are small, they cook in minutes and dry if left on high heat too long. Cut even medallions, sear briefly, and sauce. Or cube for quick sautés. Trim silver skin carefully without wasting the lean meat. Excellent value relative to centre-cut filet when priced as tips.
