Tail

The tail of the fillet tapers to a thin point—still tenderloin meat, but too narrow for premium even steaks. Tips are diced for stroganoff, tips recipes, kebabs, or pounded medallions. Waste is low when the kitchen plans for secondary uses. It is less prized as a steak but valued for cost control: same tenderness in dishes where shape does not matter. Do not force tall steaks from the tail; they will cook unevenly. Quick sauté and cream or peppercorn sauces suit the mild flavour.
