Eye of Round
Eye of round is the neat, cylindrical muscle from the round—very lean, uniform in shape, and easy to roast whole or slice into medallions. It lacks the marbling of loin cuts, so it shines as rare roast beef for cold slicing, carpaccio-style service, or jerky more than as a juicy steakhouse steak. It is prized for tidy presentation and low fat. Roast low, pull early, rest, and slice paper-thin for sandwiches. If grilling steaks, keep them thin and rare. Overcooking produces dryness faster than almost any other common cut.
