Bottom Round

Bottom round is a lean hindquarter block used for pot roast, braising steaks, and London-broil-style preparations when sliced and marinated. It works hard in life, so collagen and dryness are risks unless moisture and time are applied. Some of the muscle becomes rump-related steaks in other cutting systems. It is prized for economical family meals and for lean sliced beef. Braise with aromatics, or roast very gently and slice thin. Cubes suit stew if not from the toughest heel end.
